THE TRASIERRA KITCHEN AND COOKS

Gioconda has been the one who turned the kitchen around and started making the food at Trasierra so spectacular, for the past three years she has worked with Patricia (from Cazalla de la Sierra) who is a sensational cook and who has caught the mood and flavours of everything we like.  Guests love her cooking and we feel very fortunate to have discovered someone local who is completely on our wavelength.We have had great contributions to our kitchen in the past from inspiring cooks from Lebanon, the US and South America and we are planning a course of Indian Cooking.Our inspirations are Francis Mallman, Kamal Mouzawak, Madhur Jaffrey, Elizabeth David, Yotam Ottolenghi and Sam and Sam Clarke from Moro.
